This drink is said to have been originated in Venice by barman Giuseppe Cipriani who experimented with a blend of local fizzy wine, Prosecco, and pureed peach flesh. The pink colour reminded him of a painting by Giovanni Bellini in which a painted saint wore a toga matching the colour of Giuseppe’s creation. For this reason he named it the Bellini. This is a perfect drink for summer parties or as an aperitif outside your favourite restaurant.
